Tonight the Giro d'Italia finishes, bit it's a complete coincidence that I'm finishing  dinner with a piece of Gorgonzola.  For a few years now, we've been buying the Gorgonzola made by Mauri and imported by Will Studd's Calendar cheese company. (and featured on his TV show as well, if that's your thing.  Have you ever seen such an infectiously enthusiastic cheese show host?).  I think it's excellent, and our bistro guests have all agreed. It's such a strongly flavoured and well balanced cheese, with lots of blue flavour, plus lots of richness that it sets a high benchmark for our local blue cheeses (and I don't think they compare well).
